We make batches of this green tomato cake every year, but never have enough freezer space to make enough for the whole year. Fortunately we also have lots of apples to produce a variety of cakes. Stewed apple is this year’s favourite for Gregor so we’ve been indulging in all kinds of apple desserts from crumble to ice cream sundae with toffee apple sauce.
Green Tomato Cake
2 1/4 cups sugar
1 cup vegetable oil
3 eggs
2 teaspoons vanilla essence
3 cups flour
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmet
1 cup pecans or walnuts
1 cup raisins
2 1/2 cups diced green tomatoes
Preheat oven to 180oC. Mix together wet ingredients. Combine with dry ingredients then add nuts, raisins and tomatoes.
Pour into 9 x 13 inch pan. Bake for about 1hr or until skewer comes out clean from centre.
