April foraging recipe: Wild Garlic mash

Do you know of a patch of wild garlic in your neighbourhood? Perhaps not something we can all get hold of in the current lockdown situation but hopefully we will have options in future to access some wild garlic in local woodland. It is best harvested before it flowers and it is very tempting to gather considerably more than you really need, but you can freeze it in ice cubes or turn it into pasta dough as well.

 

Wild Garlic Mash

1kg floury main crop potatoes

2 large handfuls (about 150g) wild garlic leaves

45g butter

150 – 300 ml hot milk

salt

 

Saute wild chopped wild garlic before stirring through the mashed potatoes.
