Chilli sin carne
INGREDIENTS
5 sundried tomatoes
3 large dried chillies
4oz (115g) Puy lentils
1 tbs olive oil
1 onion chopped
1 x 400g tin of kidney beans
1 x 400g tin of chopped tomatoes
250ml water
150ml red wine
2 garlic cloves, crushed
15g dark chocolate
salt and pepper
METHOD
- Soak sundried tomatoes and chillies in boiling water for 20 minutes, then drain and chop.
- Heat oil and add onion until golden. Add tomatoes, wine, lentils and garlic. Add water and lentils, chopped chillies and sundried tomatoes. Simmer for 20 minutes.
- Add kidney beans and simmer another 5 minutes.
- Add chocolate, season to taste and serve.
Serve with baked potatoes, baked sweet potatoes, rice or flatbreads.
