Chilli sin carne

INGREDIENTS

5 sundried tomatoes

3 large dried chillies

4oz (115g) Puy lentils

1 tbs olive oil

1 onion chopped

1 x 400g tin of kidney beans

1 x 400g tin of chopped tomatoes

250ml water

150ml red wine

2 garlic cloves, crushed

15g dark chocolate

salt and pepper

 

METHOD

  1. Soak sundried tomatoes and chillies in boiling water for 20 minutes, then drain and chop.
  2. Heat oil and add onion until golden. Add tomatoes, wine, lentils and garlic. Add water and lentils, chopped chillies and sundried tomatoes. Simmer for 20 minutes.
  3. Add kidney beans and simmer another 5 minutes.
  4. Add chocolate, season to taste and serve.

Serve with baked potatoes, baked sweet potatoes, rice or flatbreads.
