Grain free granola

This is one of the best things to take on a camping trip. It will make breakfast (as granola); snacks on the trail (as trail mix) and dessert (as crumble topping)

Ingredients

40g unsweetened dessicated coconut

224g flaked almonds

125g chopped pecans

120g chopped walnuts

36g chia seeds

7g ground flaxseed

1 1/2 tsp ground cinnamom

24g light brown sugar

1/4 tsp sea salt

45ml olive oil

75ml maple syrup

33g dried berries

28g sunflower seeds

Method

Preheat oven to 160oC

In a large mixing bowl combine everything up to salt

In a small saucepan on a low heat, warm coconut milk and maple syrup and pour over dry ingredients. Mix together.

Spread on a baking sheet and bake for 20 mins or so.

Remove and add dried berries and sunflower seeds.

Bake for anoter 5 – 10 mins – but make sure it doesn’t overbake.

Once browned remove from oven and let cool before breaking up and storing in an airtight container.
