Fresh from the garden to the kitchen

Delicious moist alternative to carrot cake and a veg boost for the kids which they might enjoy.

Courgette cake

1 small courgette

75g butter, softened

75g runny honey

75g caster sugar

seeds from 1/2 a vanilla pod

2 medium eggs

juice of 1/2 lemon

190g self raising flour

40g almonds, finely chopped

2 tbsp natural yoghurt

Cream cheese frosting

25g butter, very soft

100g cream chese

100g icing sugar

grated lime zest

1tbsp lime juice
