Our favourite spinach soup recipe:
Serves 4
25g butter
1 medium onion
1 medium potato
1 garlic clove
1 tsp ground cumin
1 litre vegetable stock
50g creamed coconut
250g fresh spinach
salt and pepper
2 tablespoons fresh coriander
lemon or lime juice
Melt butter and cook onion, potato and garlic in a covered saucepan for 10 minutes. Stir in the cumin and cook for 2 minutes. Add the stock. Cover and bring to the boil and simmer for about 15 minutes. Stir in creamed coconut and spinach. Puree and reheat with coriander and lemon juice.
Take care not to cook the spinach too long as this will make the bright green colour of the soup more dull and less attractive.
