Recipe request: Kiran’s venison curry
(Recipe courtesy of Nicola Fletcher’s Ultimate Venison Cookery)
Nicola came to Boat of Garten several years ago as part of a seasonal cookery demonstration. She showcased several recipes from the book – not the curry – but including a venison chocolate cake, not one for the vegetarians then. The cake had a slightly unusual texture and a very rich taste but still not sure it’s something we’ll serve up regularly as it raises a lot of eyebrows and the venison component makes it quite expensive to offer.
We had this curry with rice to avoid cross-contamination with the vegetarian food we were also serving as the veggie food needed to be gluten free. This dish can easily be gluten free as none of the listed ingredients contain gluten naturally and it is also low fat as venison is naturally low fat.
900g diced venison
2 onions finely chopped
mustard seeds, large pinch
cumin seeds, large pinch
6 cloves garlic
1 green chilli
200g tin chopped tomatoes
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon of chilli powder
salt to taste
1/2 glass of red wine (optional)
2 medium potatoes, cubed
2 tablespoons fresh coriander
150ml cream (optional)
Gently fry onions, mustard seeds and cumin seeds. Add the garlic, chilli and ginger and continue frying for about 10 minutes over a low heat until the onions have turned reddish bwoen and the spices release their flavours. Add the tomatoes, ther est of the spices and 1 – 2 teaspons of salt. Stir for 5 minutes, then add 100ml of water, the red wine, and finally the venison.
Cover the pan and simmer gently for about 2 hours, stirring occasionally to stop it sticking. Add the cubed potatoes about halfway through. Right at the end, add teh cream and coriander and serve with rice and/or Naan bread.
